Eventually what becomes of the wastewater after it trickles from the leach field into the ground is either absorption by plant roots, or sinking down into the groundwater. Leach fields need to be sizable enough to deal with the volume of liquid the septic system processes, and have to also be porous enough to efficiently drain off. Given that anaerobic digestion only decomposes some of the solids settled at the bottom of your septic tank, it is going to be necessary to pump out the tank now and again so that no sludge overflows into the leach field, which will damage both the environment and your pocketbook. There are two factors which determine how often you must have the tank pumped out: the size of the tank and the volume of solids, plus the ambient temperature, in that anaerobic digestion is more vigorous in higher temps. It is best to keep an eye on how much excessive or non-biodegradable material that goes through the septic system so as to avoid system overload, and be cautious about overloading the leach field with excessive use of water.
